A very different way to bake eggplant. It is totally vegan.
- beat vigorously the first seven ingredients to make an emulsion.
- Dip eggplant slices in oil mixture. Let oil drip off.
- Then dip into almond flour and place on heavy cookie pan. Drizzel eggplant with a little leftover oil or extra oil.
- Bake at 450 degrees for 15 minutes. Then turn over and bake another 15 minutes.
- Serve with your favorite marinara sauce.
